Broccoli Slaw

1 pkg broccoli slaw
8 chopped green onions
1 pkg ramen noodles- crush
1/3 cup sunflower seeds
1 cup slivered almonds

I like to toast the ramen noodles, sunflower seeds and almonds lightly and keep separate until ready to serve to really bring out the flavor and crunch.

Mix the marinade together and pour over top of slaw- DO NOT STIR. let sit in fridge for 2 hours then stir before serving.  Alternately, mix the dressing separately (I like using a mason jar) and then shake well, pour and mix over slaw mixture before serving.. 

1 cup mayo
1/3 cup sugar
3 T.  red wine vinegar

Cranberry Jell-O Salad

Submitted by Kendall (I got this from my mother-in-law and it originated with her friend Ruth)

Not a lot of cranberry lovers in my house, but I love this little salad.

2 pkgs cherry jello (small)
2 cups HOT water
Mix in jellied cranberry sauce….I use my electric mixer on LOW to make sure jello is dissolved and cranberry sauce is mixed in well
Fill can with applesauce and mix in
*I sometimes add some drained, crushed pineapple for additional texture


Chill. Top with whipped topping before serving.

Avocado Fruit Salad

1 20 oz. Can crushed pineapple in juice (drain and reserve juice)
1 c. olive oil
3/4 c. white wine vinegar
2 cloves minced garlic
4 T. chopped fresh basil
3 avocados ( peeled & sliced or cut into chunks)
3 oranges (peeled and sectioned) *I used 6 clementines instead.

In a small container with lid, place juice, oil, vinegar, garlic and basil. Close lid and shake vigorously. Arrange avocado and oranges on a platter or bowl. Spoon crushed pineapple over the top and drizzle with vinaigrette. Serves 10-12.

Cranberry Salad

Submitted by Aunt Bonnie (recipe from her mother-in-law)

2 cups cranberries

2 cups sugar

Grind cranberries and add sugar, refrigerate overnight.
(I use Splenda for 1/2 of the sugar because of Uncle Gary`s diabetes)

Add:
1 c seedless chopped grapes

3/4 c chopped nuts

Just before serving add 1 1/2 cups of cool whip.

Pineapple Salad

Submitted by Aunt Bonnie (recipe from her mother-in-law)

1 large can pineapple (crushed) - drain juice and reserve
1 8-oz pkg of Philadelphia Cream Cheese
1 bag of miniature marshmallows

Make a paste of the cream cheese and pineapple juice. Add pineapple and marshmallows. Let stand 3 hours or longer. Top with whipped topping and serve.

Walnut Gorgonzola Salad

For anyone who loves salads plus loves blue cheese – they will absolutely love this recipe. I don’t have exact amounts as it is an always evolving recipe depending on what I have on hand.

Bag of mixed field greens
Granny Smith apple, chopped into small pieces
Dried cranberries
Walnuts, chopped
Gorgonzola cheese, crumbled
Ken’s Raspberry Walnut Vinaigrette

Mix all ingredients together in a bowl. Serve with raspberry walnut vinaigrette salad dressing.

Kendall's variation: I'm not a huge blue cheese fan, so I use feta cheese. Add some grilled chicken for a one bown meal. I also found a yummy salad topping called Salad Pizazz that is a mixture of cranberries and glazed walnuts that is great. I also use this salad dressing with baby spinach, sliced strawberries, walnuts and feta.

Deep Sea Salad

Submitted by Aunt Janice (My Dad's sister, this was their Mom's recipe - aka Nanny)

This is a recipe from my Dad's Mom, Nanny. It's what I would like to classify as old school, I'm guessing it's a good 50 or 60 years old. There was a time when Jell-O salads were THE thing to make. My Mom used to make a green Jell-O salad that required all green ingredients...olives, celery, you name it!!! ig.

1 pkg. lime jello (small)
1 pkg orange jello (small)
2 cups boiling water
1/2 package small marshmallows
1/2 cup salad dressing (aka miracle whip or mayo)
1/2 cup whipped cream
1 pkg. cream cheese or cottage cheese (I'm guessing about a cup)
Small can crushed pineapple

Put in bowl orange jello and marshmallows. Add boiling water and whip until marshmallows are melted. Add cream/cottage cheese and salad dressing. Let Chill and then add whipped cream and crushed pineapple(drained). Refrigerate until set. Fix lime jello as directed on box and let cool so it won't melt other jello and pour on top of set orange jello. Refrigerate until firm.

I think I remember eating this and it actually sounds pretty good. Maybe I'll make it so I can add a picture!
