Texas Sheet Cake

2 cups flour
2 cups sugar
1 tsp baking soda
1/4 tsp salt
1 cup butter
1/3 cup unsweetened cocoa powder
**I've used dark cocoa powder and it is very yummy
2 eggs
1/2 cup buttermilk
1 1/2 tsp vanilla (the REAL stuff!)

Chocolate Buttermik Frosting below

Grease a 15x10x1 baking pan.

Combine flour, sugar, baking soda and salt - set aside.

In a medium saucepan combine butter, cocoa powder, and 1 cup water. Bring mixture just to boiling, stirring constantly. Remove from heat. Add the chocolate mixture to dry mixture and beat with an electric mixer on medium to high speed until thoroughly combined. Add eggs, buttermilk, and vanilla. Beat for 1 minute (batter will be thin). Pour batter into the prepared pan.

Bake at 350 degrees for 25 minutes or until a wooden toothpick comes out clean when inserted in the center of the cake. Pour warm Chocolate Buttermilk Frosting over the warm cake, spreading evenly. Place cake in pan on a wire rack to cool before cutting. Makes 24 servings (or 4 depending on how you cut). :-)

Chocolate Buttermilk Frosting
In a medium saucepan combine 1/4 cup butter, 3 T unsweetened cocoa powder, and 3 T buttermilk. bring to boiling. Remove from heat. Add 2 1/4 cups sifted powder sugar and 1/2 teaspon vanilla. Beat util smooth. If desired, stir in 3/4 cup coarsely chopped pecans.

Sopapilla Cheesecake

2 8 oz cans crescent rolls
8 oz cream cheese (I used low fat)
2 cups sugar, divided
2 teaspoons vanilla, divided
1/2 cup butter
Ground Cinnamon
12 servings
10 mins prep

1. With one (1) can of crescent rolls, line the bottom of a 9 x 13 pan sprayed with Pam.
2. Stretch dough and pinch holes closed to form a crust.
3. Blend together, with mixer, softened cream cheese, 1 cup of sugar and 1 teaspoons vanilla.
4. Spread cheese mixture evenly over the dough but not too close to the edges.
5. Stretch the second can of crescent rolls over the cream cheese mixture to form a top crust.
6. Melt oleo, blending in 1 cup of sugar and 1 teaspoons vanilla.
7. Pour evenly over the crust and sprinkle generously with cinnamon.
8. Bake at 350 for about 30 minutes until bubbling and bottom crust is slightly browned.
9. Let cool and refrigerate before cutting into squares.

Strawberry Banana Surprise Cake

1 box strawberry cake mix (the one with the extra pudding in the mix - the box should tell you)
1 med box banana cream pudding mix
1/4 cup of graham cracker crumbs
1 capful of almond extract

Prepare cake as directed on the box. Add the above extra ingredients. Bake as suggested.

**Probably really good with a butter cream or whipped frosting**
At home, I used chocolate butter cream frosting (it was all I had in the fridge)

My kids thought this was DELICIOSO!!
