For anyone who loves salads plus loves blue cheese – they will absolutely love this recipe. I don’t have exact amounts as it is an always evolving recipe depending on what I have on hand.
Bag of mixed field greens
Granny Smith apple, chopped into small pieces
Dried cranberries
Walnuts, chopped
Gorgonzola cheese, crumbled
Ken’s Raspberry Walnut Vinaigrette
Mix all ingredients together in a bowl. Serve with raspberry walnut vinaigrette salad dressing.
Kendall's variation: I'm not a huge blue cheese fan, so I use feta cheese. Add some grilled chicken for a one bown meal. I also found a yummy salad topping called Salad Pizazz that is a mixture of cranberries and glazed walnuts that is great. I also use this salad dressing with baby spinach, sliced strawberries, walnuts and feta.
