After living in Jeddah, Saudi Arabia for 3 years, my family left with this wonderful recipe for Hummus – a Middle Eastern dip serves at the beginning of most meals.
1 lb. can chickpeas (also called garbanzo beans)
½ cup tahini (sesame seed paste – can usually be found in the Ethnic food section – looks like peanut butter)
¼ cup water
½ cup yogurt, plain
½ tsp. salt
1 clove garlic
Juice of 1 lemon
Garnish: Tomato wedges, chopped parsley, paprika, cumin and ½ cup olive oil.
Drain chickpeas. Add with water to food processor and mash well. Blend in remaining ingredients. Put into serving bowl, garnish and serve with pita bread cut into triangle wedges.
